I’m so lucky to have been sharing this journey with my closest friend outside of my husband. Jersey is my accountability partner and the one true person that had dragged me along the process when all I wanted to do was to cry and wallow in the cards that I was dealt. -400mls coconut cream (I prefer the organic BPA free lining tin or home made)
-1 tbs gelatin (Greater Lakes – grass fed gelatin powder)
-1/2 tsp vanilla
-1 probiotic capsule (optional)
1) Place coconut cream and sprinkle gelatin into TM. I like to have the blades spinning moderately speed 3 for mix on speed 2 for 5 seconds. This can be done by hand with a whisk in a saucepan. Let sit for 5 minutes
2) Mix on speed 3 at temp 37 for 2 minutes OR on the stove top carefully
3)Add honey, vanilla and probiotic and continue to mix on speed 3 at temp 37 for another 4 minutes.
4) Pour into small slice tin and refrigerate for 1 hour or into little glass jars for individual servings
I usually double this recipe when I make it and then I’ve got it ready for breakfast or morning tea snack during the busy week ahead.
